Ingredients You’ll Need
This recipe uses only a few ingredients that each play an important role.
Almond Flour
Super-fine blanched almond flour creates a soft, tender crumb while keeping carbohydrates lower than traditional wheat flour.
It also provides:
- Healthy fats
- Vitamin E
- Magnesium
- Plant-based protein
Psyllium Husk Powder
This ingredient is one of the most important parts of the recipe.
When mixed with warm water, psyllium husk forms a gel that helps hold the bread together, replacing much of the structure that gluten normally provides.
Baking Powder
Without yeast or eggs, baking powder helps create lift and a lighter texture during baking.
Warm Water
Warm water quickly hydrates the psyllium husk and allows the dough to come together within minutes.
Apple Cider Vinegar
A small amount of vinegar reacts with the baking powder to encourage a better rise while adding very little flavor.
Sea Salt
Salt enhances flavor and helps balance the richness of almond flour.
Step-by-Step Instructions
Step 1: Combine the Dry Ingredients
In a large bowl, whisk together:
- Super-fine almond flour
- Psyllium husk powder
- Baking powder
- Sea salt
Mix thoroughly to remove any clumps before adding liquid ingredients.
Step 2: Add the Wet Ingredients
Pour the warm water and apple cider vinegar into the bowl.
Stir immediately using a sturdy spoon or spatula.
Within about one minute, the dough will become noticeably thicker as the psyllium absorbs moisture.
Don’t worry if it seems wet at first—this is completely normal.
Step 3: Shape the Dough
Allow the dough to rest for about two minutes.
With lightly damp hands, gently shape it into a round or oval loaf.
Transfer it to a parchment-lined baking tray.
For a rustic appearance, lightly score the top using a sharp knife.
If desired, sprinkle with:
- Fresh rosemary
- Sesame seeds
- Pumpkin seeds
- Minced garlic
- Mixed herbs
These additions provide extra flavor without changing the recipe’s simplicity.
Step 4: Bake
Bake in a preheated 350°F (180°C) oven for approximately 50–60 minutes.
The loaf is ready when:
- The crust is golden brown.
- It feels firm.
- It sounds hollow when tapped underneath.
Step 5: Let It Cool Completely
This step is often overlooked—but it may be the most important one.
Freshly baked gluten-free bread continues to set as it cools.
Allow the loaf to cool on a wire rack for at least one hour before slicing.
Cutting it too soon may leave the center soft or gummy.
