Zesty Lemon Meltaway Cookies πŸ‹βœ¨
These light, buttery cookies with a bright lemony flavor truly melt in your mouth. A perfect treat for any occasion!

Ingredients:

For the Cookies:
1 cup (2 sticks) unsalted butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
Zest of 1 lemon
2 tablespoons fresh lemon juice
2 cups all-purpose flour
1/4 cup cornstarch
1/4 teaspoon salt
For the Lemon Glaze (optional):
1 cup powdered sugar
2-3 tablespoons fresh lemon juice
Zest of 1 lemon

Instructions:

Make the Cookies:
Preheat your oven to 350Β°F (175Β°C). Line a baking sheet with parchment paper.
In a large bowl, beat the butter and powdered sugar together until light and fluffy.
Add the vanilla extract, lemon zest, and lemon juice. Mix until combined.
In a separate bowl, whisk together the flour, cornstarch, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
Scoop out small balls of dough (about 1 tablespoon each) and place them on the prepared baking sheet. Flatten slightly with your fingers or the bottom of a glass.
Bake for 10-12 minutes, or until the edges are set but not browned. Let the cookies cool completely.

Make the Glaze (optional):
In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth. Add more juice if needed for a thinner consistency.
Drizzle or spread the glaze over the cooled cookies. Let set before serving.

Tips:
For an extra lemony punch, add a pinch of lemon extract to the cookie dough or glaze.
Store cookies in an airtight container for up to 5 days.
Enjoy these citrusy, melt-in-your-mouth cookies with tea or coffee!
